Gros Michel. The banana before the banana.

Everything the modern banana is measured against — and the thing it replaced.

Gros Michel — "Big Mike" to the growers who built the trade around it — is a banana varietal, not a brand or a grade. Thicker-skinned and more robust than the Cavendish, it travels as a fruit that was literally built for shipping, with a denser texture and a far more aromatic flesh. It is the banana that made bananas a global fruit in the first place.

The Collapse

The Gros Michel was grown as one enormous genetic clone across Latin America — every plant identical, every plantation vulnerable to the same thing. That thing was Fusarium wilt, "Panama disease." It moved through the monoculture with nothing to stop it, and by the 1960s the commercial Gros Michel was effectively gone. The industry didn't fix the banana. It swapped in a resistant stand-in and moved on.

Extinction, commercially speaking. Not biologically.

The variety survived in pockets — smaller farms, higher ground, places the blight never reached. Altitude is one of those places.

Grown high in the Guatemalan highlands, in cooler air and volcanic soil, the Gros Michel can be farmed again — carefully, at a scale that has nothing to do with the monocultures that killed it. Elevation slows the fruit and concentrates the flavor. It's the difference between a crop and a cultivar worth seeking out.

Closer to custard than to a snack.

Where a Cavendish is firm and mild, the Gros Michel is creamy and dense, with a concentrated, honeyed sweetness and a faint floral aromatic lift. It holds its structure raw, caramelizes cleanly, and reads clearly through dairy and heat — which is why it earns a place in a pastry section, not just a fruit bowl.
